I have used GenuTax for many years and it is free and legit and your tax return stays on your own computer only. Not on their servers.
Did you find any bugs or errors of GenuTax ?
https://www.genutax.ca/Home/Restrictions
Capital Gains (certification in process), ready to accept these tax returns until late March.
I will try GenuTax.

Yes, correct, you just start over and immediately you will be able to delete older return, but empty new one will be there. Like I said, they hide a bit and you need to play a bit to be able to delete. Good luck!
1.
WealthSimple Tax online web version:
I contacted CSR at WealthSimple Tax by email, they replied me:
After you go through the " Start Over" procedure, the Tax Return is deleted on WealthSimple Tax server.
If you keep your WealthSimple Tax profile, their server does not store your personal information unless you add your personal information under the profile. The profile retains Tax Returns.
After you delete your WealthSimple Tax profile, their server will not have your personal information anymore and all retained Tax Returns are deleted.
2.
Log in Turbo Tax online web account, you have to click a button " Request to delete your Turbo Tax account", during this procedure, you can select " Tax Return, T4 slip" to be deleted. It takes 15 days they complete your request.
I requested, will wait for their update.
3.
GenuTax for windows, they will not collect your personal information, all data saved on your computer.
But I tried to google if the transmitted data between your computer and CRA server, is encrypted or not, I could not find this information.

CRA says the NETFILE data is encrypted in transit:
File your taxes online: Understand NETFILE
…
Security of personal information
We accept responsibility for the security of information once we receive it. We take precautions to ensure that there is no unauthorized access to your data, and ensure the confidentiality of data you send using NETFILE. We use sophisticated security and encryption to protect this website and your personal information.
We are also responsible for making sure personal and financial information is sent in an encrypted format between your computer and our servers. This ensures that computer hackers and other Internet users can’t view or alter the data you send to us.
Tax software companies whose products are certified for NETFILE are not representatives of the CRA. You are not obliged to send personal information directly to the tax software company when you ask for software assistance. Email is not a secure method of communication. Sending personal information by email is a big concern and increases the risk of identity theft.

Not a direct answer from CRA, but this link refers to encryption in the second heading https://filingtaxes.ca/everything-you-need-to-know-about-netfile-in-canada/
CRA itself says the transfer is encrypted under Security of Personal Information https://www.canada.ca/en/revenue-agency/services/e-services/digital-services-individuals/netfile-overview.html

Why would you need to have a TurboTax account?
You need only activation code in order to do and file your taxes. I never 'registered' with TurboTax even program is bugging me every time I start it up.

Only TurboTax, not WealthSimple could file the tax return, I forgot what special case it was. So I only used TurboTax for 2020 tax year, after that I contacted the CSR, he told me could not delete the tax return, then I stopped using TurboTax.

My answer is, I can’t respond. Haven’t used TurboTax for over a decade.
And the other 2 just by name alone, I wouldn’t use.

Netfile is a protocol (process) to file one's T1 tax return data electronically to CRA servers. The protocol is designed, developed and owned by CRA itself. Vendor tax software packages have to conform to that protocol to enable electronic filing and the software itself must be certified by CRA each year as correctly making the proper calculations. Certification does not mean every potential tax scenario is tested for accuracy but I suspect the most probable T1 filing scenarios are tested. The Netfile process establishes an encrypted direct connection between your device and CRA computers for those tax software packages that reside on your device. There is no intermediary. It is the only way I prepare and file tax returns.
It may be different for the Online versions of tax software where you actually connect to the vendor's server to populate your tax return and Netfile from that location. I have never used the online version of tax software so cannot say from where the Netfile process originates nor if a digital copy of one's Netfiled tax return resides/remains on the vendor's server.
There is a glitch at the current time for electronic filing of tax returns that contain capital gains or losses. Given the confusion on cap gains inclusion rate, and the recent retraction of the higher 66% inclusion rate, tax software must be re-certified by CRA to revert back to 2023 calculations. Until CRA re-certifies 2024 tax software, Netfiling of tax returns with cap gains/losses has been blocked (denied). Media word has it that these re-certifications should all be cleared by mid-March. Stay tuned.
Near the bottom of this link https://www.canada.ca/en/revenue-agency/corporate/about-canada-revenue-agency-cra/individual-income-tax-return-statistics.html you will see how many of which form of tax filings were filed in previous years. For 2024 (the 2023 tax year), some 32-33% of T1 tax returns were Netfiled, as compared to 60% that were Efiled (the same process as Netfiling except by third parties such as accounting firms, H&R Block, etc), and 7-8% that were paper filings.
Added: The data file that the Netfile protocol sends to CRA is called the T1-KFS Summary. It is a remarkably small data file.
Thank you!

Thanks everyone. Great answers and extra queries from others.
I feel comfortable with my Studio Tax for Mac as it all resides on my equipment. I keep many years of PDF copies of all variations that the software creates on my hard drive(s) and as well paper copies in a 10 year rotation. I keep PDF copies of all Tslips.
While I had no reason to back up my decision to not use online tax preparation, I’m glad I didn’t. I believe that years ago BMO offered free online use of TurboTax? And they may have used it in some way….nope…..banking and tax preparation is not a good mix.
So for $20 or $10 each Studio Tax is perfect vs a preparer charging $75 each and up. And still have the use of it for “what ifs” or have to recalculate your taxes after a certain CU gives out bogus T slips. This year the key # for Studio Tax 2024 works on previous years as well.

While I embrace and use all tech such as cell phone for banking, Applepay and whats not, I will continue to only use software that prepares my tax return and save locally. There is no upside to have it upload to any company's cloud, regardless of the company. This way if my tax filing information is leaked, I know at least its from CRA directly.
Even if a CSR claim I can delete and it's not saved, I will not risk if what the CSR said is even accurate.

GIC-Fanatic: For security, I would never leave such documents as tax returns on an internal hard drive. When done working on your datat (offline!), copy it off to at least two external hard drives, USB drives, ZIP disks or - best of all - CD-ROM or DVD-ROM drives which cannot be erased or altered once finalized.
