I've been using the 'Free' Document Foundation's alternative to Microsoft 365 (a.k.a. Microsoft Office) for just over a month now ... and So Far, So Good.

OfflineI have used Libre Office for a number of years for some things, and the Open Office predecessor before that.
However, I also have MS365 primarily for the 1TB of One Drive cloud storage, but also certain individuals I interact with that uses the MS suite, and also with Google Docs. I am relatively indifferent to the 'suites'. However it comes my way, I am good with it.

OfflineWith the Windows 10 support deadline coming soon, and my aged yet completely usable PC ineligible to upgrade, I recently switched over to Linux Mint.
It is packaged with the LibreOffice suite, and my little bit of usage so far has been quite productive, and it seems to read and write the common Microsoft formats well. I am preferring it to the Google Docs/Sheets that I was using under Windows.

If I understand you correctly, your pasted text is white on white?
If that's the case, just select the text and change the text colour to black, or whatever colour you want.

OfflineI use LibreOffice too, on Ubuntu MATE Linux. But mostly for compatibility with files from elsewhere; I use several older but very effective tools for text editing, page layout, spreadsheets and graphics. There are some things I do what are best performed with ancient but reliable WordStar!

OfflineI'm still using MS Office 2010. Works quite well for me. Built-in help no longer works because 2020 is no longer supported but Google searches have always provided the answers for things I forgot.
The last time I tried Libre Office was version 3.30. Perhaps it's time to look at the current 25.8 ... :):):)

For us newbie LibreOffice users ... How interchangeable are LibreOffice files with MS365/Office files, and vise versa?
- Example:
If I send a LibreOffice generated document to an MS365/Office user, can they make edits to that document, and then send it back to me ... and can I read that revised document, using LibreOffice?

OfflineI have only done 'doc' conversions a few times, both ways, meaning Libre--->MS 365 and MS Office --> Libre without any noticeable effects. That said, they were relatively simple documents and I didn't see any formatting issues.
I have not tried converting other examples such as spreadsheets.
You might google for a more thorough explanation.

OfflineMy workplace was using Open/Libre (on Windows) some years ago for the bulk of employees, with certain others (like me) getting Office through a corporate license. It seemed to work well enough for those purposes - I think with the word processing the main difficulty was occasional slight formatting differences in a few edge cases or whatever.
For my personal self, I've never more than played around with it. I've got some ancient Excel sheets that use VBA macros (yes, ugh) or a couple of other things that compatibility programs have issues with, and for legacy reasons I still use Outlook as my primary email app. I used to buy the Mac version of the standalone Office package every few years, and lately I'm using the enterprise license from work. If I left that, I'd probably pick up the Microsoft365 subscription, it is cheap enough (I'd probably get a 30% Workplace Discount on a personal license before I left) that I wouln't bother trying to get everything moved over to something else.

I managed to avoid WordStar and the classic key combos. I had instead looked around for something to run on IBM that would do academic footnotes, and picked up version 2.2 of a very nice but somewhat obscure little program from a company called Satellite Software. It went on to get renamed WordPerfect!
But my true love was a programmer's editor called BRIEF. It could slice, dice, chop and puree, had a macro language, and I think some of the key combos with the old IBM 10 function-key-vertical-on-the-left keyboard are still baked into my fingers and activate during REM sleep.

My use of LibreOffice is fairly basic, so it should all work out for me.

Normally, if you are able to save your Libre doc as a MS version, i.e. Libre offers flexibility using '.doc' or '.docx' (text editor), or '.xls' or '.xlsx' (spreadsheet) file extensions, that should work for your other party. Google Docs however, should be compatible with MS.

Finally someone else that likes the MATE Linux desktop environment. That, Xfce, and Cinnamon are my favourites.

Wow, that goes back too. I remember Quattro. I did try it but didn't switch...
