OfflineYes, I'm sure I could turn off internet on my computer but I just poked around Windows a bit and couldn't see anything obvious. I did find something about LAN Connection Status that had Disable as an option but I was too afraid to try it.
Cutting off internet would affect nothing else in the house, the only thing "smart" in our house is my wife but unfortunately she has even less interest in tech stuff than me.

Just unplug the Ethernet network cable on the computer that runs to the network switch or to the Internet modem.

OfflineYes, Ethernet and IP are designed to handle interruptions in connectivity. Any applications that access the Internet (like web browsers, e-mail clients, VPN, and Zoom clients) should be closed before.
Applications are mixed in recovering when the network connection is interrupted while they are in the middle of doing something.

OfflineOr if one has a wireless (WiFi) connection, then simply go into Settings and 'disconnect' from wireless temporarily. It has been a decade or more since I have had a hard wired Ethernet type connection.
I agree with Norman1 that one will want to shut down active applications, or at least save work, before the Internet disconnection to avoid potential possible recovery issues. I believe this is overkill though. Once active applications are closed, there is virtually nothing going on. The bigger issue is the actual presence of malware/spyware/viruses already on one's computer and that is why one has anti-virus/anti-malware scanning to begin with, right?

OfflineBill: You need simply to unplug the modem cable from the computer end. Leave it connected to the incoming cable. (added: I see Norman1 has noted this.) If you can't conveniently reach the plug because it's behind a load of gear, get an extension wire and leave its connection to the original wire where it's convenient.
I have my router and modem powered from a separate power bar, which I only turn on when going on line.
I never trust any indicators or applets to accurately reflect connection status.
Dean: Old Operating Systems are fine and perfectly safe if not connected to the internet. I have only one computer connected to it - all the others are air-gapped.

OfflineThanks, AltaRed and RetirEd, now I know what to do. I can easily disconnect the cable from my old desktop.
I do also have a newer laptop and it was easy to find how to disconnect from internet on it. I disconnected, internet was not available when I opened browser, and then reconnected, so that makes me feel confident.
I have Bell internet service, far as I know there's virus, etc protection included in my package, never had a problem ever with infection.
